Things are really beginning to get hectic here at LJC HQ, however the festive atmosphere (provided by many a Christmas song and decorations) has helped ease the stress of this time of year. Plus the fact that we absolutely adore creating sweet treats has made our long days in the studio speed by. If you've been catching up with us over on Facebook, you would know that every Friday here on the blog leading up to Christmas, a member of the LJC team will be sharing one of their favourite festive recipe. This week we turn to an old classic and everyone's favourite but opt for something with a little twist. Christmas fudge with an added touch of elegance.

Method
- Line a 9x13 baking dish with foil and lightly spray with cooking spray.
- Combine sugar, sour cream, butter and salt in a heavy 2 qt saucepan.
- Bring mixture to boil over medium heat, stirring frequently.
- Continue cooking, stirring occasionally, to soft ball stage (238 degrees).
- Remove from heat and stir in chocolate chips until full melted. This will take a few minutes :)
- Stir in the marshmallow creme (fluff) and vanilla extract until smooth and blended.
- Stir in dried cranberries until evenly distributed.
- Pour into the baking dish, cool to room temperature.
- Chill in refrigerator for several hours before cutting into squares,
- Store in an airtight container.
